A quick little update
Oct. 28th, 2003 09:08 amSo, I made a pretty good pot roast last night. I added some garlic and basil which really was nice, and I had some to eat, and then I fell asleep.
Well, it was a very tiring day, mind. I covered for our front desk worker, who was out sick, and we had multiple network issues at the same time. No complaints, mind. I was just tired. So I slept. Until around eleven.
Only I'd left the crock pot on during that time. (I only turn it off, typically, after seconds, to keep the food hot until I'm ready to pack up leftovers.) So, I had a second helping at eleven, mostly to see if I'd managed to ruin it with many hours overcooking.
My god, it was wonderful. Best pot roast I ever put in my mouth.
So, because I traditionally use the juice from pot roast as a stock for soup or stew the next day, I decided to do a long cook on it, to see how it works. So I started it last night, then went back to bed. When I got up, it was already pretty nice. I figure it'll either be great by the time I get home or it'll be hopelessly ruined and I'll cook a frozen pizza instead.
*pause*
What's that? You say I promised some good news over the weekend, but never got back to you? Oh, I'm sorry to hear that. Well, no big deal -- I just finally got my appointment with a surgeon at Dartmouth Hitchcock, which is the meeting I'll find out when my surgery is scheduled, which means it'll probably be the end of December/Beginning of January when I have it. The meeting's on Thursday of this week.
*pause*
Hey, I said it was good news.... Put down that knife!
(As for the insurance -- no, it's not resolved. We're not delaying in the meantime, though. Our theory is it's better to be poor and alive to pay it off then dead while waiting for a lawsuit to go through.)
